Lean shortbread coconut cookies with dark chocolate

It may look a bit unusual, but the taste is worth trying! Especially if you keep in mind that this dessert contains no eggs or dairy products.

Ingredients

  • coconut flakes 80g
  • condensed coconut milk 120g
  • sea salt pinch
  • dark chocolate 100g
  • lean shortcrust pastry (ready-made shortbread dough)

Instructions

  1. Mix coconut flakes with condensed coconut milk. Leave for about 30 minutes. Then divide into 5 equal parts and form the bars. (For better shaping, you can put it in the freezer / fridge).
  2. Pre-bake 5 lean shortbread blanks.
  3. Then, using melted chocolate, glue the coconut bars to the baked shortbread pieces.
  4. Melt the chocolate in the microwave (or in a water bath) and pour over the cookies (on the wire rack). To increase the fluidity of chocolate, you can add a small amount of vegetable oil (about 20g).
  5. Decorate with coconut flakes.
