What’s better than a homemade dessert, nothing! That’s why today we decided to prepare some lemon-scented mini plumcakes, without eggs, they are soft, delicate and irresistible, which will leave everyone speechless.
Ingredients
- 250 g of 00 flour
- 50 g of potato starch
- 150 g of sugar
- 110 ml of seed oil
- 60ml of milk
- 80 ml of lemon juice
- grated peel of half a lemon
- half sachet of baking powder
Instructions
- In order to prepare these mini plumcakes, let’s start by putting the flour, starch, sugar and yeast in a bowl, mix well with a spoon. Gradually pour the milk and work with the electric whisk, as soon as it is finished add the oil.Let’s now add the grated lemon peel, be careful not to remove the white part which is bitter.
- Then we combine the filtered lemon juice and as soon as the dough is ready, we can transfer it into the lightly oiled molds.
- We then leave to cook in a hot oven at 180° for 25 minutes, we always do the toothpick test and if it comes out dry then we can switch off and let it cool before removing from the mold. Then we serve and enjoy.
