Mandarin and caramel cake

  • 3 mandarins
  • 150 g of wheat flour
  • 3 eggs
  • 60 g of ground almonds
  • 150 g soft butter
  • 120 g of sugar
  • 1 teaspoon of baking powder
  • 1/2 teaspoon of baking soda
  • The zest of 2 tangerines
  • 1 cup of sugar to make the caramel
  • Lemon juice


  1. In a frying pan put a cup of sugar and lemon juice and put it to heat. When it starts to bubble,turn it around with a wooden spoon.Let it take cool until it turns a light brown color. Pour the mixture over a 24 cm diameter mold
  2. Take the three tangerines and wash them. Cut them into slices and place them above the caramel.
  3. In a large bowl or bowl, place butter, add the 120 g of sugar and mix it with a hand mixer with rods.
  4. Add the three eggs one by one and beat.
  5. Add baking powder, bicarbonate of soda, zest of the two tangerines, 60 g of ground almonds and the 150 g of wheat flour. Mix everything well.
  6. Pour the mixture on top of the pan with the caramel.
  7. Heat the 200 ° oven hot up and down. When it gets hot put the cake in the center of the oven.Let it bake for a few 20 minutes.
  8. When its baked,overturn the cake as soon as possible so that the caramel does not crystallize. Let it cool and it will be ready for consumption.
