Thin pancakes with meat and cheese are a delicious dinner that can be prepared in less than an hour.I recommend frying pancakes in two frying pans, it will turn out twice as fast. The dough can be mixed by hand or using kitchen appliances; if you cook in a food processor, add boiling water last. The ingredients indicated in the recipe yield approximately 20 thin pancakes in a 20-centimeter frying pan. By the way, some of the pancakes can be wrapped in cling film and left in the refrigerator; they will be stored for a couple of days.

 

Ingredients for the dough:

  • 260 g wheat flour;
  • 430 ml milk;
  • 80 ml boiling water;
  • 3 eggs;
  • 25 g olive oil;
  • 15 g granulated sugar;
  • a pinch of citric acid;
  • 1\2 teaspoon of soda;
  • 1\2 teaspoon salt;
  • refined vegetable oil and butter.

Filling ingredients:

  • 400 g homemade minced meat;
  • 1 large onion;
  • 3 stalks of celery;
  • 1 teaspoon oregano;
  • 1 teaspoon ground sweet paprika;
  • 50 g cheese;
  • salt and pepper to taste.

Step-by-step cooking recipe

Let’s make the dough. Mix milk, chicken eggs, salt and granulated sugar.

Pour in wheat flour, soda and a pinch of citric acid (you can replace citric acid with half a tablespoon of apple cider vinegar or 9% vinegar).

Add olive oil and mix thoroughly. When the dough becomes smooth, homogeneous and without lumps of flour, pour in boiling water and mix everything thoroughly again. Leave the dough for 15 minutes at room temperature.

Heat a frying pan with a thick bottom and non-stick coating well. Cut the raw potato in half, dip it in refined vegetable oil, and grease the hot frying pan. Pour 3 tablespoons of dough, tilt the pan so that the dough spreads into a thin layer. Fry for 45 seconds on each side over medium heat.

Place the finished pancakes in a stack. If you don’t use everything, then after the pancakes have cooled completely, wrap them in film and put them in the refrigerator.

Let’s make the filling. Fry finely chopped onions and diced celery in olive oil for 12 minutes.

Add homemade minced meat to the vegetables.

Knead the minced meat with a spatula, add salt to taste, season with sweet paprika and oregano.

Fry everything together for 7-10 minutes.

Place two tablespoons of meat filling on the pancakes.

Roll the pancakes into rolls. Melt a tablespoon of butter in a frying pan and fry the pancakes on one side.
