Super Fluffy pancakes


Fluffy pancakes are more or less normal pancakes , the difference lies in the egg whites, which are whipped until stiff, and in the cooking.j


  • 2 large eggs
  • 35 g of flour
  • 25 g of milk
  • 1 tablespoon of sugar
  • 1/2 teaspoon of vanilla essence
  • 1 teaspoon baking powder
  • vegetable oil or butter for cooking


  1. First, separate the yolks and whites and whip the latter until stiff together with the sugar, to create a very firm meringue.
  2. On the side, work the egg yolks with the vanilla, the milk, the baking powder and the flour.
  3. Then add the two compounds, mixing gently with a movement from bottom to top, so as not to disassemble.
  4. Proceed with the cooking: heat a lightly greased non-stick pan (wipe a little oiled kitchen paper over it), pour 2 spoonfuls of the mixture, cover with a lid and cook for a couple of minutes over low heat.
  5. As soon as the bottom is set (you must be able to lift it away from the pan), add 1 more tablespoon of the mixture to the center.
  6. Close the lid again and cook for another 1-2 minutes, until even the upper surface is more or less cooked, then turn the pancake with a spatula to brown it and finish cooking, again with the lid on, again for 1-2 minutes .
  7. Continue like this for the other pancakes.
  8. The fluffy pancakes are ready, all you have to do is fill them as you like, for example with the classic maple syrup and a little icing sugar and fresh fruit, like I did.
