Tender and juicy at the same time! Fairytale chocolate cubes with caramel and cream cheese are the real delicacy for lovers of sweet cakes. The delicate combination of cocoa dough combined with caramel and cream cheese creates a fabulous symphony of flavors and aromas and at the same time delights your taste buds. With a cup of great coffee, you’ll feel like you’re in a sweet fantasy.
What will we need:
Dough:
- 5 egg whites
- 8 g vanilla sugar (1 teaspoon)
- pinch of salt
- 150 g sugar (3/4 cup)
- 5 egg yolks
- 120 g flour (3/4 cup)
- 30 g cocoa powder (2.5 spoons)
- 1 teaspoon of baking powder
- 50 g boiling water (1/5 cup)
Caramel:
- 200 g sugar (1 cup)
- 120 g hot cream 33%
- 50 g of butter (2 tablespoons)
Cream:
- 200 g whipping cream 33%
- 600 g cream cheese
Glaze:
- 120 g dark chocolate (1 cup)
- 60 g of butter (2.5 tablespoons)
For decorating:
- remaining cream and caramel
- toffee chocolates
How are we going to proceed:
1. Dough: Pour egg whites into a bowl, sprinkle vanilla sugar and add a pinch of salt – beat and gradually add sugar while beating. Whip to a white foam, then pour in the egg yolks and pour in the sifted mixed dry ingredients: flour, cocoa powder and baking powder. Towards the end, pour boiling water mixed with a little dough – mix well.
2. Then pour the dough into a 28 x 18 cm parchment-lined form and bake in a preheated oven for 35 minutes at 180 °C. After baking, let the dough cool slightly.
3. Caramel: Pour the sugar into the pan, mix and caramelize it over a low heat. Then add the bitter cream 33% – mix and finally add the butter. Cook until it boils. After cooking, pour the caramel into a bowl, cover with foil and leave to cool.
4. Take the slightly cooled dough out of the mold and remove the foil from it, then cut it into 2 equal parts.
5. Cream: Pour the whipping cream into a bowl – whip it and add the cottage cheese. Beat to a fluffy foam, into which mix the caramel – beat well and mix. Keep 3-4 tablespoons aside.
6. Then transfer the cream to a decorating bag and use it to shape waves on the first part of the dough. Then, using a decorating bag, shape caramel waves on the cream, then cover with another layer of cream and the second part of the dough and put it in the fridge for 4 hours.
7. Frosting: Break the dark chocolate into a small bowl and add the butter. Dissolve together in the microwave or in a water bath – stir.
8. After 4 hours, take the cake out of the fridge and cut it into cubes, which you cover with the prepared chocolate glaze.
9. At the end, decorate with the remaining cream, also caramel and toffee chocolate.
