Vegan orange plumcake is a soft and genuine dessert that is prepared with orange juice and zest in the dough. It has a delicious flavor and an inebriating orange scent, it is ideal for a genuine , tasty breakfast and to start the day in a special way .
The recipe is lactose-free , egg-free and butter-free , but you will get a very very soft and fluffy plumcake for a whole week.
This plumcake can be prepared in 15 minutes and with just a few ingredients, even without an electric mixer. The easy procedure makes it a perfect dessert to prepare with children or on weekdays, you will only dirty one bowl and if you have a Bimby you can add all the ingredients and blend.
For breakfast you can cut the plumcake into slices and fill it with jam , or soak it in milk like this, it is truly irresistible!

Ingredients

  • 250 g of flour
  • 200 ml of orange juice squeezed from 2 or more oranges
  • 140 g granulated or cane sugar
  • 100 g almond flour
  • 100 ml of seed oil
  • 16 g instant baking powder
  • zest of an orange
  • a teaspoon of vanilla extract

To decorate the surface

  • a few slices of orange
  • granulated or cane sugar

Instructions

  1. Preheat the oven to 180 °C in static mode.
  2. Grate the zest of an orange and set aside.
  3. Cut 2 or 3 oranges in half and squeeze them to obtain 200 ml of juice, you can filter it to remove any residue from the squeezing.
  4. Pour the juice into a large bowl with the sugar, vanilla and orange zest.
  5. Mix then gradually pour in the oil, almond flour and flour.
  6. Also add the sifted yeast (there is no need to sift it if you use an electric mixer) and mix vigorously to obtain a creamy and smooth mixture.
  7. Butter and flour a 25 cm plumcake mold, you can also line it with baking paper.
  8. Pour the mixture into the mold, decorate the surface with 3 thin slices of orange, otherwise with dried fruit.
  9. Sprinkle some sugar on the surface of the cake and bake it at 180 °C for 50-60 minutes, pierce the center of the cake with a toothpick to check if it is well cooked, the dough must not stick.
  10. Remove from the oven and let the cake cool in the mold, remove it when it is completely cold, it will keep very soft for up to 7 days.
