This dessert bar combines all your guilty pleasures into one irresistible treat, perfect for parties, celebrations, or when you just need that extra bit of sweetness in your life. Here’s how to whip up these heavenly bars.

Ingredients:

Cookie Layer:

  • You’ll need a 17.5 ounce package of chocolate chip cookie mix along with half a cup (equivalent to 1 stick) of softened salted butter for the recipe.
  • 1 large egg
  • 24 Oreos

Cheesecake Layer:

  • 16 ounces (2 8-ounce packages) cream cheese, softened
  • 1 ⅓ cups powdered sugar
  • 1 tablespoon cornstarch
  • ⅔ cup sour cream
  • 2 large eggs
  • 1 and 1/3 cups of roughly chopped Oreos, with some portion reserved for later use in the recipe.
  • Caramel sauce (optional) for garnish

Instructions:

  1. Prepare the Cookie Layer:
    • Preheat your oven to 350°F (175°C) and line a 9×13 inch baking pan with parchment paper, leaving an overhang on the sides to easily lift the finished bars out.
    • In a large bowl, combine the chocolate chip cookie mix with softened butter and one egg, following the package instructions. Mix until a soft dough forms.
    • Press this dough evenly into the bottom of the prepared baking pan. Layer the 24 Oreos on top of the cookie dough in a single layer, covering the entire surface.
  2. Create the Cheesecake Mixture:
    • In another bowl, beat the softened cream cheese until it reaches a smooth consistency. This step ensures that the cream cheese will blend well with the other ingredients and contribute to the desired texture of the dessert. Add powdered sugar and cornstarch, mixing until combined. Blend in sour cream and eggs, one at a time, beating just until incorporated.
    • Gently fold in 1 cup of the rough chopped Oreos into the cheesecake mixture, saving the remaining ⅓ cup for topping.
  3. Assemble the Bars:
    • Carefully pour the cheesecake mixture over the Oreo layer in the pan, smoothing the top with a spatula. Sprinkle the remaining chopped Oreos evenly over the cheesecake layer.
  4. Bake:
    • Place the prepared cheesecake in the preheated oven and bake for 35 to 40 minutes, or until the cheesecake is fully set and the edges turn lightly golden. This indicates that the dessert is cooked through and ready to be enjoyed. The center should still be a bit wobbly; it will firm up as it cools.
  5. Cool and Chill:
    • Allow the bars to cool to room temperature, then chill in the refrigerator for at least 3 hours, or overnight, which is ideal for the flavors to meld and the bars to set properly.
  6. Serve:
    • Using the overhanging parchment paper as handles, carefully lift the bars out of the pan. This method helps to remove the bars easily and prevents them from sticking to the pan. Slice into squares and drizzle with caramel sauce before serving, if desired.
