  • 1 tsp baking soda
  • 1 tsp baking powder
  • 1 tsp salt
  • 1 tsp cocoa powder (for depth of color)
  • 1 cup (240ml) buttermilk, room temp
  • 2 large eggs, room temp
  • 1½ cups (300ml) vegetable oil (or melted butter)
  • 2 tsp vanilla extract
  • 1 tsp white vinegar
  • 1-2 tbsp purple gel food coloring (adjust for desired vibrancy)

For the Cream Cheese Frosting:

  • 8 oz (225g) cream cheese, softened
  • ½ cup (115g) unsalted butter, softened
  • 4 cups (480g) powdered sugar, sifted
  • 1 tsp vanilla extract
  • Pinch of salt

Optional Decorations:

  • Purple sprinkles, edible glitter, or fresh berries

Instructions

1. Make the Purple Velvet Cake:

  1. Preheat oven to 350°F (175°C). Grease and line two 8-inch (20cm) round cake pans with parchment paper.
  2. Whisk dry ingredients – In a bowl, sift flour, sugar, baking soda, baking powder, salt, and cocoa powder.
  3. Mix wet ingredients – In another bowl, whisk buttermilk, eggs, oil, vanilla, vinegar, and purple food coloring until smooth.
  4. Combine – Gradually add wet ingredients to dry, mixing just until combined (do not overmix).
  5. Bake – Divide batter evenly between pans. Bake 25-30 mins or until a toothpick comes out clean.
  6. Cool – Let cakes cool in pans for 10 mins, then transfer to a wire rack to cool completely.

2. Make the Cream Cheese Frosting:

  1. Beat butter & cream cheese until smooth (~2 mins).
  2. Add powdered sugar gradually, then vanilla and salt. Whip until fluffy (~3 mins).

3. Assemble the Cake:

  1. Level cakes (if needed) for even layers.
  2. Frost – Place one layer on a plate, spread frosting, add the second layer, and cover the entire cake with remaining frosting.
  3. Decorate – Add sprinkles, swirls, or a drip of white chocolate for extra flair!
  4. Chill – Refrigerate 30 mins before slicing for cleaner cuts.

Tips for Success

🎂 For deeper purple – Use gel food coloring (liquid may dilute batter).
🎂 No buttermilk? Mix 1 cup milk + 1 tbsp lemon juice/vinegar, let sit 5 mins.
🎂 Storage – Keep refrigerated (up to 4 days) or freeze unfrosted layers for later.

This dreamy, velvety cake is as delicious as it is eye-catching! Perfect for birthdays, Halloween, or Pride celebrations
