Juicy Pineapple Cake Recipe

Ingredients:

For the cake:

  • 2 cups (250g) all-purpose flour
  • 1 ½ teaspoons baking powder
  • ½ teaspoon baking soda
  • ¼ teaspoon salt
  • ½ cup (115g) unsalted butter, softened
  • 1 cup (200g) granulated sugar
  • 2 large eggs, room temperature
  • 1 teaspoon vanilla extract
  • 1 cup (240ml) crushed pineapple (with juice)
  • ½ cup (120ml) buttermilk (or milk + ½ teaspoon vinegar)

For the pineapple glaze:

  • 1 cup (120g) powdered sugar
  • 2–3 tablespoons pineapple juice (from the crushed pineapple)
  • 1 teaspoon vanilla extract (optional)

For garnish (optional):

  • Fresh pineapple slices
  • Maraschino cherries
  • Toasted coconut flakes

Instructions:

  1. Preheat the oven:
    • Preheat your oven to 350°F (175°C). Grease a 9×9-inch baking pan or a round cake pan and line it with parchment paper.
  2. Make the cake batter:
    • In a medium bowl, whisk together the flour, baking powder, baking soda, and salt.
    • In a large bowl, beat the softened butter and sugar until light and fluffy. Add the eggs, one at a time, mixing well after each addition. Stir in the vanilla extract.
    • Add the crushed pineapple (with juice) and mix until combined.
    • Gradually add the dry ingredients to the wet ingredients, alternating with the buttermilk, and mix until just combined. Be careful not to overmix.
  3. Bake the cake:
    • Pour the batter into the prepared pan and smooth the top with a spatula.
    • Bake for 30–35 minutes, or until a toothpick inserted into the center comes out clean.
    • Let the cake cool in the pan for 10 minutes, then transfer it to a wire rack to cool completely.
  4. Make the pineapple glaze:
    • In a small bowl, whisk together the powdered sugar, pineapple juice, and vanilla extract (if using) until smooth. Adjust the consistency by adding more pineapple juice (for a thinner glaze) or powdered sugar (for a thicker glaze).
  5. Glaze and garnish the cake:
    • Drizzle the glaze over the cooled cake. Let it set for a few minutes.
    • Garnish with fresh pineapple slices, maraschino cherries, or toasted coconut flakes if desired.
  6. Serve:
    • Slice and enjoy! Store any leftovers in an airtight container at room temperature for up to 2 days or in the refrigerator for up to 5 days.
