Ingredients

  • 1 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 4 large eggs
  • 2 tsp vanilla extract
  • 2 cups all-purpose flour
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1 tsp ground cinnamon
  • 1/2 tsp ground nutmeg
  • 2 cups grated apples (about 2 medium apples)
  • 1/2 cup chopped walnuts (optional)
  • For the caramel glaze:
  • 1/2 cup unsalted butter
  • 1 cup packed light brown sugar
  • 1/4 cup milk
  • 1 tsp vanilla extract
  • Pinch of salt

Instructions

  1. Preheat the oven to 350°F (175°C). Grease a 9×5 inch loaf pan and set aside.
  2. In a large bowl, cream together the softened butter and granulated sugar until light and fluffy. Add the eggs one at a time, mixing well after each addition. Stir in the vanilla extract.
  3. In a separate bowl, whisk together the flour, baking powder, baking soda, salt, cinnamon, and nutmeg. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  4. Fold in the grated apples and chopped walnuts, if using. Pour the batter into the prepared loaf pan.
  5. Bake for 60-65 minutes, or until a toothpick inserted into the center of the cake comes out clean.
  6. While the cake is baking, prepare the caramel glaze. In a small saucepan, melt the butter over medium heat. Stir in the brown sugar, milk, vanilla extract, and salt. Bring the mixture to a boil, then reduce the heat to low and simmer for 5 minutes, stirring constantly.
  7. Once the cake is done baking, remove it from the oven and let it cool in the pan for 10 minutes. Carefully remove the cake from the pan and transfer it to a wire rack set over a baking sheet.
  8. Pour the warm caramel glaze over the cake, allowing it to drizzle down the sides. Let the glaze set before slicing and serving.
