Fruit ice cream in the mixer is a dessert that can be prepared instantly with just three ingredients : Greek yogurt, frozen fruit and sugar. This ice cream is very fresh for the summer, healthy and ideal for a light snack for adults and children. The ice cream without cream and fat remains very creamy because it contains Greek yogurt and if you have ripe fruit to consume it also becomes a recycled dessert . You can use all the fruit you prefer, even more types of fruit and if you want to create an ice cream cup with more flavours, wash the mixer and blend each fruit with the same weight of yoghurt, it’s instant !
To prepare this quick ice cream , the fruit must already be frozen , so you can keep some fruit pieces in the freezer and some yogurt in the fridge, so when you want a light dessert you just have to mix the ingredients.
It is prepared at the last minute and is the ideal solution even when you have guests . With seasonal fruits you will get delicious ice cream effortlessly, even in the vegan version . The classic fruit ice cream has longer resting and freezing times, but also a much higher calorie intake, so if you prefer to stay light , instant ice cream in the mixer is the one for you!
Ingredients
- 400 g of mixed fruit of your choice (strawberries, blueberries, raspberries, blackberries or other types of fruit..)
- 400 g vanilla Greek yogurt (or plain or vanilla sweetened yogurt)
- 1 tablespoon granulated sugar
Instructions
- Wash the fruit well, clean and cut it into not too large pieces. If you use small fruit it is not necessary to cut it.
- Place the fruit in the freezer until completely frozen (approximately 12 hours).
- Place the yogurt and sugar in a large mixer, add the frozen fruit and operate it at maximum speed.
- Continue blending the mixture until it becomes a smooth cream. If necessary, stop the mixer and use a spatula to bring everything to the bottom, then turn it back on.
- Transfer the ice cream obtained into a tray or serve it directly in cups.
