Ingredients

  • 2 cups apples, shredded
  •  cups sugar
  • 1 cup carrots, shredded
  • 1 cup cranberries, chopped
  •  cups all-purpose flour
  • 1 tbsp baking powder
  • 2 tbsp baking soda
  • 2 tsp cinnamon
  • 2 tsp coriander powder
  • ½ cup roasted walnuts, chopped
  • ½ cup vegetable oil
  • 2 medium eggs

Instructions

  1. Grease the muffin tins. Set aside.
  2. Add the shredded apples, and then sugar. Mix well to combine.
  3. Add shredded carrots and chopped cranberries. Stir until mixed completely, then set aside.
  4. Add the walnuts and continue mixing.
  5. Add vegetable oil and eggs to the mixture. Continue to mix.
  6. Combine both wet and dry mixture. Mix until combined completely.
  7. Preheat oven to 375 degrees F.
  8. Scoop mixture into the muffin tins.
  9. Bake for 25 to 30 minutes, then serve and enjoy!
