A rich and tasty pasta with simple ingredients, it is prepared in a few minutes by cooking everything in the same pan , the important thing is to use a suitable pasta such as tubes or smooth thimbles (some also cook it with chopped spaghetti).
You can enrich it with bacon cubes and flavor it with mint leaves.
I used fresh peas but you can also make it with frozen peas.
Ingredients
- 300 g tube-type pasta
- 1 onion, small
- 600 g fresh peas, shelled
- to taste salted ricotta, or seasoned pecorino
- to taste extra virgin olive oil
- fresh mint to taste
- salt and pepper
Instructions
- Shell the fresh peas and wash them under running water.
- Prepare chopped onion and brown it in a high-sided pan with a drizzle of extra virgin olive oil
- Add the fresh peas (or frozen ones) and cover them with hot water (about 3 teacups) then leave to cook covered for about 3 minutes.
- Add the pasta to the same pan and mix, season with salt and pepper, cover with a lid and leave to cook over low heat until completely cooked, stirring gently from time to time with a wooden spoon.
- Once the pasta is cooked, add the fresh mint leaves and a nice grating of salted ricotta or pecorino, before serving.
