Ingredients

  • 1 cup unsalted pistachios
  • 2 cups heavy cream
  • 1 cup whole milk
  • 3/4 cup granulated sugar
  • 1 teaspoon vanilla extract
  • Pinch of salt

Instructions

  1. Preheat the oven to 350°F (175°C). Spread pistachios on a baking sheet and toast for about 5-7 minutes. Let cool and then chop roughly.
  2. In a saucepan, combine milk, cream, sugar, and salt. Heat over medium heat, stirring until the sugar dissolves.
  3. Remove from heat and let the mixture cool. Stir in the vanilla extract and half of the chopped pistachios.
  4. Pour the mixture into an ice cream maker and churn according to the manufacturer’s instructions.
  5. In the last few minutes of churning, add the remaining pistachios.
  6. Transfer to an airtight container and freeze until firm, about 4-6 hours.
