Inspired by Ben & Jerry’s, this homemade version features a creamy vanilla base swirled with cherry compote and rich chocolate chunks.
Ingredients
For the Cherry Compote:
- 1 ½ cups fresh or frozen cherries (pitted and chopped)
- ¼ cup granulated sugar
- 1 tbsp lemon juice
For the Ice Cream Base:
- 2 cups heavy cream
- 1 cup whole milk
- ¾ cup granulated sugar
- 1 tsp pure vanilla extract
- 2 tbsp cherry juice (optional, for deeper flavor/color)
Mix-ins:
- ½ cup semi-sweet chocolate chunks (or chopped dark chocolate)
Instructions
- Prepare the Cherry Compote:
- In a saucepan, combine cherries, sugar, and lemon juice. Cook over medium heat for 8–10 minutes, stirring until cherries soften and the mixture thickens. Let cool completely (refrigerate to speed up).
- Make the Ice Cream Base:
- In a bowl, whisk together heavy cream, milk, sugar, vanilla, and cherry juice (if using) until sugar dissolves.
- Churn the Ice Cream:
- Pour the base into an ice cream maker and churn according to manufacturer’s instructions (about 20–25 minutes).
- In the last 2–3 minutes of churning, add the cooled cherry compote and chocolate chunks. Allow the machine to mix until evenly distributed.
- Freeze to Set:
- Transfer to a loaf pan or airtight container. Freeze for 4+ hours until firm.
Tips for Success
- Texture: Ensure the cherry compote is thick and cooled to prevent ice crystals.
- Chocolate: Chop chocolate into small, bite-sized pieces for easier scooping.
- Dairy-Free Option: Substitute heavy cream and milk with full-fat coconut milk.
- Serving: Let sit at room temperature for 5 minutes before scooping for creamier texture.
