Inspired by Ben & Jerry’s, this homemade version features a creamy vanilla base swirled with cherry compote and rich chocolate chunks.


Ingredients
For the Cherry Compote:

  • 1 ½ cups fresh or frozen cherries (pitted and chopped)
  • ¼ cup granulated sugar
  • 1 tbsp lemon juice

For the Ice Cream Base:

  • 2 cups heavy cream
  • 1 cup whole milk
  • ¾ cup granulated sugar
  • 1 tsp pure vanilla extract
  • 2 tbsp cherry juice (optional, for deeper flavor/color)

Mix-ins:

  • ½ cup semi-sweet chocolate chunks (or chopped dark chocolate)

Instructions

  1. Prepare the Cherry Compote:
    • In a saucepan, combine cherries, sugar, and lemon juice. Cook over medium heat for 8–10 minutes, stirring until cherries soften and the mixture thickens. Let cool completely (refrigerate to speed up).
  2. Make the Ice Cream Base:
    • In a bowl, whisk together heavy cream, milk, sugar, vanilla, and cherry juice (if using) until sugar dissolves.
  3. Churn the Ice Cream:
    • Pour the base into an ice cream maker and churn according to manufacturer’s instructions (about 20–25 minutes).
    • In the last 2–3 minutes of churning, add the cooled cherry compote and chocolate chunks. Allow the machine to mix until evenly distributed.
  4. Freeze to Set:
    • Transfer to a loaf pan or airtight container. Freeze for 4+ hours until firm.

  • Texture: Ensure the cherry compote is thick and cooled to prevent ice crystals.
  • Chocolate: Chop chocolate into small, bite-sized pieces for easier scooping.
  • Dairy-Free Option: Substitute heavy cream and milk with full-fat coconut milk.
  • Serving: Let sit at room temperature for 5 minutes before scooping for creamier texture.
