Chocolate Chip Brioche Rolls

Ingredients
Dough:
- 3 cups (375g) bread flour (or all-purpose flour)
- ¼ cup (50g) granulated sugar
- 1 tsp salt
- 2¼ tsp (1 packet) instant yeast
- ½ cup (120ml) warm milk (110°F/45°C)
- 3 large eggs (room temperature)
- ½ cup (115g) unsalted butter, softened (cut into cubes)
Filling:
- 1 cup (175g) chocolate chips (semisweet or dark)
- 1 tbsp cocoa powder (optional, for extra richness)
Egg Wash:
- 1 egg + 1 tbsp milk (whisked)
- Coarse sugar (for sprinkling, optional)
Instructions
1. Make the Dough:
- Mix dry ingredients – In a stand mixer bowl, whisk flour, sugar, salt, and yeast.
- Add wet ingredients – Pour in warm milk and eggs, then mix with a dough hook on low speed until combined (~2 mins).
- Incorporate butter – Add softened butter, a few cubes at a time, mixing until fully absorbed (dough will be sticky).
- Knead – Increase speed to medium and knead for 8-10 mins until smooth and elastic.
- First rise – Cover bowl with a towel and let rise in a warm place for 1-2 hours (or until doubled).
2. Shape the Rolls:
- Punch down dough and turn onto a floured surface.
- Roll out into a 12×16-inch rectangle (~½-inch thick).
- Sprinkle chocolate chips (and cocoa powder if using) evenly over the dough.
- Roll up tightly (like a cinnamon roll), then cut into 12 equal pieces.
- Place in a greased 9×13-inch pan or on a baking sheet, leaving space between rolls.
- Second rise – Cover and let rise for 30-45 mins until puffy.
3. Bake:
- Preheat oven to 375°F (190°C).
- Brush rolls with egg wash and sprinkle with sugar (optional).
- Bake for 18-20 mins until golden brown.
- Cool slightly before serving.

- For extra fluffiness, refrigerate dough overnight after the first rise (let it warm up slightly before shaping).
- Vegan option: Use plant-based butter, flax eggs, and dairy-free chocolate.
