Soft, buttery, and loaded with chocolate chips—perfect for breakfast or dessert!

Prep Time: 20 mins (+ 2 hrs rising) | Bake Time: 20 mins | Makes: 12 rolls

Ingredients

Dough:

  • 3 cups (375g) bread flour (or all-purpose flour)
  • ¼ cup (50g) granulated sugar
  • 1 tsp salt
  • 2¼ tsp (1 packet) instant yeast
  • ½ cup (120ml) warm milk (110°F/45°C)
  • 3 large eggs (room temperature)
  • ½ cup (115g) unsalted butter, softened (cut into cubes)

Filling:

  • 1 cup (175g) chocolate chips (semisweet or dark)
  • 1 tbsp cocoa powder (optional, for extra richness)

Egg Wash:

  • 1 egg + 1 tbsp milk (whisked)
  • Coarse sugar (for sprinkling, optional)

Instructions

1. Make the Dough:

  1. Mix dry ingredients – In a stand mixer bowl, whisk flour, sugar, salt, and yeast.
  2. Add wet ingredients – Pour in warm milk and eggs, then mix with a dough hook on low speed until combined (~2 mins).
  3. Incorporate butter – Add softened butter, a few cubes at a time, mixing until fully absorbed (dough will be sticky).
  4. Knead – Increase speed to medium and knead for 8-10 mins until smooth and elastic.
  5. First rise – Cover bowl with a towel and let rise in a warm place for 1-2 hours (or until doubled).

2. Shape the Rolls:

  1. Punch down dough and turn onto a floured surface.
  2. Roll out into a 12×16-inch rectangle (~½-inch thick).
  3. Sprinkle chocolate chips (and cocoa powder if using) evenly over the dough.
  4. Roll up tightly (like a cinnamon roll), then cut into 12 equal pieces.
  5. Place in a greased 9×13-inch pan or on a baking sheet, leaving space between rolls.
  6. Second rise – Cover and let rise for 30-45 mins until puffy.

3. Bake:

  1. Preheat oven to 375°F (190°C).
  2. Brush rolls with egg wash and sprinkle with sugar (optional).
  3. Bake for 18-20 mins until golden brown.
  4. Cool slightly before serving.

Tips:

  • For extra fluffiness, refrigerate dough overnight after the first rise (let it warm up slightly before shaping).
  • Vegan option: Use plant-based butter, flax eggs, and dairy-free chocolate.
  • Serve warm with a drizzle of melted chocolate or a dusting of powdered sugar.

Enjoy these decadent, buttery brioche rolls!
