  • 1 1/2 cups all-purpose flour
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/4 cup unsalted butter, softened
  • 1/2 cup granulated sugar
  • 1/4 cup vegetable oil
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1/2 cup buttermilk
  • 2 tablespoons unsweetened cocoa powder
  • 1/2 cup semisweet chocolate chips (optional)

Instructions

1.Begin by preheating your oven to 350°F (175°C) and lining a muffin tin with paper liners. In a medium bowl, whisk together the flour, baking soda, and salt. Set aside.

2.In a large bowl, cream together the softened butter and sugar until light and fluffy. Add the vegetable oil, egg, and vanilla extract, mixing well until combined. Gradually add the dry ingredients to the wet ingredients, alternating with the buttermilk, beginning and ending with the dry ingredients. Mix just until combined.
