Lotus cheesecake is a versatile dessert that suits any occasion. Perfect at the end of a meal for a lunch or dinner with family or friends, it can also be an original idea for a breakfast or snack full of flavour.

Ingredients

For the base

  • 250 g Lotus biscuits
  • 80 g melted butter

For the filling

  • 500 g spreadable cheese
  • 500 g fresh whipping cream
  • 120 g Lotus spreadable cream
  • 50 g icing sugar

For decoration

  • 3 lotus biscuits to crumble
  • 200 g Lotus spreadable cream

Instructions

  1. For the base:Crumble the Lotus biscuits in a mixer. Add the melted butter and mix until smooth.
  2. Line the base and sides (using melted butter) of a 22cm diameter springform cake pan with baking paper.
  3. Distribute the biscuit mixture on the bottom of the mold, pressing well with the back of a spoon to compact it. Place the biscuit base in the freezer for at least 30 minutes.
  4. For the cream:In a large bowl, mix the spreadable cheese with the Lotus spreadable cream until you obtain a smooth and creamy mixture.
  5. Pour the cream and sugar into a bowl and beat the whisk until you obtain a semi-whipped mixture.
  6. Gently add the semi-whipped cream to the Lotus cheese and cream mixture, mixing with a spatula to obtain a smooth cream.
  7. Composition:Pour the cream onto the cold biscuit base and level the surface with a spatula. Place the cheesecake in the fridge for at least 3 hours.
  8. Decoration:Remove the cheesecake from the refrigerator, heat the Lotus cream directly in its jar in the microwave for about 45 seconds. Decorate the surface with the cream and leave to harden in the fridge for at least another 2 hours.
  9. Cut the cheesecake into slices, decorate it with crumbled biscuits and enjoy your meal.
