A simple version of the popular Indian dish, made completely vegan! The tofu for Vegan Butter Chicken is prepared in a unique way that couldn’t be easier and somehow makes it taste a lot like chicken.
Ingredients
- 80ml lemon juice
- 20g ground cumin
- 30g turmeric powder
- 4 packs firm tofu, drained and dried
- sea salt flakes
- freshly milled pepper
- 700ml Butter Chicken Meal Sauce
- 250ml water
- 6 spring onions, sliced
- ½ cup coriander leaves
Instructions
- In a container that will hold the tofu, stir together the lemon juice, cumin and turmeric.
- Cut the tofu into cubes, coat in the liquid and allow to sit for at least an hour or overnight in the refrigerator.
- In a saucepan, bring the Butter Chicken Meal Sauce and water to a simmer.
- Add the tofu and it’s marinade.
- Add the spring onions and cook gently for 5 minutes.
- Fold in the coriander and serve.
