Ingredients

  • Zest of 1 lemon
  • 800 ml (approximately 28 fl oz) milk
  • 3 large eggs
  • 150g (about 5.2 oz) sugar
  • 3 tablespoons all-purpose flour
  • 40g (1.4 oz) unsalted butter
  • 270g (9.5 oz) puff pastry biscuits
  • 200g (7 oz) canned pineapple, drained
  • 30g (1 oz) shredded coconut
  • A baking mold, roughly 22 x 15 cm (8″ x 6″)

Instructions

  1. Infuse Milk: Begin by warming the milk in a saucepan until it’s hot but not boiling. Add the lemon zest to the milk, then remove from heat and allow it to cool to room temperature.
  2. Prepare Custard: In a mixing bowl, whisk together the eggs, sugar, and flour until well combined and smooth.
  3. Cook the Custard: Transfer the egg mixture to a saucepan. Cook over medium-high heat, stirring continuously, until the mixture reaches a boil and thickens into a custard. Then, remove from heat and stir in the butter until it’s completely melted and integrated into the custard.
  4. Layer the Cake: In your chosen mold, start by laying down a layer of puff pastry biscuits. Spoon a layer of the custard over the biscuits. Add a layer of canned pineapple pieces. Repeat the layers until all ingredients are used, finishing with a layer of custard on top.
  5. Chill: Cover the mold and place it in the refrigerator to set for at least 2 hours.
  6. Garnish: Before serving, sprinkle the top of the cake with shredded coconut for a tropical finish.
