Who remembers the famous Yoyo snacks ? Sponge cake discs containing lots of chocolate.
I loved them as a child!
In these slow, surreal days, a dessert can keep us company and brighten our afternoons at home! Yesterday I was looking back on my childhood a bit, I was thinking of simple snacks to make for children, that everyone would like and that are easy to make, with ingredients that we easily have in the pantry.

Aren’t they a good idea? The ingredients are few, they do not have milk, butter or oil because the base I used is the biscuit dough of my Nutella roll and they are very soft.

The process is very simple and you only use one bowl, this way it gets less dirty and is easier!
Since it is a sponge cake base , they are to be consumed within the day, but believe me they will disappear even sooner

Ingredients

  • 5 medium eggs at room temperature
  • 110 g of granulated sugar
  • 120 g of flour
  • 2 teaspoons vanilla extract or vanilla flavoring
  • 1 teaspoon baking powder

Instructions

  1. Separate the yolks from the whites
  2. Sift together the 00 flour and baking powder
  3. In a large bowl, whisk the egg whites, when they are frothy, add half the sugar and continue whisking.
  4. Add the other half of the sugar and whip until you obtain a rather firm and shiny meringue. It will take about 5 minutes
  5. Then add the vanilla extract and the egg yolks, one at a time, continuing to beat with the electric whisk.You will thus obtain a beautiful and well-whipped mixture
  6. Add the flour and yeast sifted with a spatula several times, mixing delicately from bottom to top without breaking the mixture.This step is important, you will not have to disassemble it.
  7. Cover a baking tray well with baking paper.
  8. Level the mixture and cook in a static oven preheated to 180° for about 10-15 minutes. Do not continue cooking otherwise it will harden
  9. Once the cooking time has elapsed, remove the pan from the oven and transfer the base to a surface
  10. Let cool slightly
  11. Make the molds with a medium sized pastry cutter, you can also make them smaller
  12. Take a disc and add a nice generous spoonful of Nutella or your favorite spreadable cream to the center and close with the other disc
  13. Press well in the center to even out the filling
  14. If you like, you can decorate the surface like I did or you can add simple icing sugar
