When I baked this Marble Donut for the first time I fell in love with its soft texture and its scent, a perfect mix of pumpkin and chocolate.A slightly cozy dessert , perfect for these autumn days. Also ideal to eat with a hot spiced milk, like a Pumpkin Spice is just what you need.

- 4 eggs
- 200 g white sugar
- 330 g ready pumpkin puree
- 160 g sour cream
- 115 g seed oil
- 300 g flour
- 7 g baking powder
- 3 g baking soda
- 2 tablespoons bitter cocoa
Sour cream
- 100g Greek yogurt
- 50 g fresh cream
- 12 g lemon juice(1 tablespoon)
Instructions
Sour cream
- The first thing to make is the sour cream, if we don’t already have some in the fridge.
- Mix the yogurt with the cream and lemon juice; then add the pumpkin puree and mix well
Donut
- Combine the eggs with the sugar and beat until they triple in volume.
- Add the seed oil, pouring it in a thin stream
- Turn off the whisks and pour the pumpkin and sour cream mixture over the one just whipped; mix with a hand whisk and when everything is well combined, add the flour sifted with the yeast and bicarbonate
- Once you have the pumpkin mixture, pour 1/3 of it into a bowl, add two tablespoons of bitter cocoa and mix well
- Use a donut mold, grease it with baking spray and start pouring the pumpkin mixture first, then the chocolate mixture and repeat once more. Use a toothpick to braid the mixture better.
- Cook in a preheated static oven for 45 minutes at 180C
- Unmold your cake only once it has cooled
