A few days ago I noticed some bananas starting to go south, and whipped up a quick loaf of this chocolate banana bread so they wouldn’t go to waste. I adapted my favorite best-ever banana bread recipe by throwing in some cocoa powder and chocolate chips, and the result was a deliciously moist and tender loaf with a rich chocolate flavor. It was a huge hit with everyone at my house, and one we will definitely make again!

Ingredients

  • 1 cup sugar
  • 1/2 cup butter softened
  • 2 eggs
  • 1 teaspoon vanilla
  • 3 tablespoons milk
  • 3 overripe bananas mashed
  • 1 1/2 cups flour
  • 1/2 cup cocoa powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1 1/2 cups chocolate chips

Instructions

  1. Preheat the oven to 325. Grease a 9 x 5 loaf pan and set aside.
  2. In a large bowl or the bowl of a stand mixer, cream together the sugar and butter until light and fluffy.
  3. Add the eggs, vanilla, milk, and mashed bananas, and mix until smooth.
  4. Add the flour, cocoa powder, salt, baking soda, and baking powder, and mix until just combined.
  5. Fold in the chocolate chips and pour into the prepared loaf pan. Bake 60-70 minutes, or until a toothpick inserted into the center of the loaf comes out clean.
