A few days ago I noticed some bananas starting to go south, and whipped up a quick loaf of this chocolate banana bread so they wouldn’t go to waste. I adapted my favorite best-ever banana bread recipe by throwing in some cocoa powder and chocolate chips, and the result was a deliciously moist and tender loaf with a rich chocolate flavor. It was a huge hit with everyone at my house, and one we will definitely make again!
Ingredients
- 1 cup sugar
- 1/2 cup butter softened
- 2 eggs
- 1 teaspoon vanilla
- 3 tablespoons milk
- 3 overripe bananas mashed
- 1 1/2 cups flour
- 1/2 cup cocoa powder
- 1/2 teaspoon salt
- 1/2 teaspoon baking soda
- 1 teaspoon baking powder
- 1 1/2 cups chocolate chips
Instructions
- Preheat the oven to 325. Grease a 9 x 5 loaf pan and set aside.
- In a large bowl or the bowl of a stand mixer, cream together the sugar and butter until light and fluffy.
- Add the eggs, vanilla, milk, and mashed bananas, and mix until smooth.
- Add the flour, cocoa powder, salt, baking soda, and baking powder, and mix until just combined.
- Fold in the chocolate chips and pour into the prepared loaf pan. Bake 60-70 minutes, or until a toothpick inserted into the center of the loaf comes out clean.
