Classic Cheesecake Recipe

Ingredients

For the crust:

  • 1 1/2 cups (150g) graham cracker crumbs (or digestive biscuits)
  • 1/4 cup (50g) granulated sugar
  • 6 tablespoons (85g) unsalted butter, melted

For the filling:

  • 4 (8-ounce) packages (900g) cream cheese, softened to room temperature
  • 1 cup (200g) granulated sugar
  • 1 cup (240g) sour cream, at room temperature
  • 1 teaspoon pure vanilla extract
  • 3 large eggs, at room temperature

Optional toppings:

  • Fresh berries (strawberries, blueberries, raspberries)
  • Fruit compote or caramel sauce
  • Whipped cream

Instructions

1. Prepare the crust:

  1. Preheat your oven to 325°F (160°C).
  2. In a medium bowl, mix the graham cracker crumbs, sugar, and melted butter until combined.
  3. Press the mixture firmly into the bottom of a 9-inch (23cm) springform pan. Use the bottom of a glass or measuring cup to press it down evenly.
  4. Bake the crust for 10 minutes, then remove from the oven and let it cool while you prepare the filling.

2. Make the filling:

  1. In a large mixing bowl, beat the cream cheese and sugar together on medium speed until smooth and creamy, about 2-3 minutes.
  2. Add the sour cream and vanilla extract, and mix until combined.
  3. Add the eggs one at a time, mixing on low speed after each addition until just combined. Be careful not to overmix.
  4. Pour the filling over the cooled crust and smooth the top with a spatula.

3. Bake the cheesecake:

  1. Place the springform pan on a baking sheet (to catch any leaks) and bake in the preheated oven for 50-60 minutes. The cheesecake is done when the edges are set, but the center still has a slight jiggle.
  2. Turn off the oven, crack the oven door open, and let the cheesecake cool in the oven for 1 hour. This helps prevent cracking.
  3. Remove the cheesecake from the oven and let it cool completely at room temperature. Then, refrigerate for at least 4 hours or overnight to set.

4. Serve:

  1. Run a knife around the edge of the cheesecake to loosen it from the pan, then remove the springform ring.
  2. Slice and serve with your favorite toppings, such as fresh berries, fruit compote, or whipped cream.

Tips

  • Room temperature ingredients: Ensure the cream cheese, sour cream, and eggs are at room temperature to avoid lumps in the filling.
  • Prevent cracks: Avoid overmixing the batter and cool the cheesecake slowly in the oven.
  • Water bath (optional): For an extra smooth texture, bake the cheesecake in a water bath. Wrap the springform pan in aluminum foil and place it in a larger pan filled with hot water halfway up the sides of the springform pan.
