Exotic sorbet is a light and refreshing dessert , perfect to enjoy during hot summer afternoons. This fresh dessert is a real explosion of flavors that combines the sweetness of pineapple, the intense flavor of mango and papaya and the acidity of passion fruit. Preparing it is really simple and once ready I assure you that it will disappear in the blink of an eye. To prepare the sorbet you will first have to melt the sugar in a saucepan of water to obtain a syrup that will then be poured into the ice cream maker together with the fruit. After cutting the papaya, pineapple and mango into pieces, you will simply have to put them in the appropriate ice cream maker and add the rest of the ingredients, namely the passion fruit, lemon juice and lime zest.
Then dedicate yourself to the egg whites: whip them until stiff and add them to the fruit mix in the ice cream maker; let the machine work until you obtain a compact and crystallized mixture. The sorbet is ready: serve it in two nice tall and wide glasses and garnish it with a crunchy ice cream wafer.

- Papaya 100 g
- Pineapple 100 g
- Mango 100 g
- Passion fruit 2
- Sugar 100 g
- Pasteurized egg white 30 g
- Lemon juice 1
- Water 150g
- Lime zest 1
Instructions
- Put the water and sugar in a saucepan, bring to a boil for a minute to obtain a syrup. Then let it cool completely.
- Dice the fruit (except the passion fruit) and put it in a blender with the lemon juice and blend it finely. Then transfer it to the ice cream maker with the sugar syrup, the passion fruit pulp (with all the seeds) and the lime zest.
- Turn on the machine and let it work for 20 minutes. In the meantime, whip the egg white and add it to the mixture, mixing it perfectly with a whisk. Continue to work the mixture for another 40 minutes.
- Once the sorbet has crystallized and thickened, turn off the machine and pour it into glasses. Garnish with ice cream wafers and serve!
