  • ½ cup chocolate chips (plus extra for topping)
  • Butter or oil (for cooking)

Instructions

  1. Mix dry ingredients – In a bowl, whisk together flour, sugar, baking powder, baking soda, and salt.
  2. Combine wet ingredients – In another bowl, beat the egg, then mix in yogurt, milk, vanilla, and melted butter.
  3. Make the batter – Gently fold the wet ingredients into the dry ingredients until just combined (small lumps are okay). Avoid overmixing.
  4. Add chocolate chips – Stir in the chocolate chips.
  5. Rest the batter – Let it sit for 5-10 minutes (this helps fluffiness).
  6. Cook the pancakes – Heat a non-stick pan over medium-low heat. Lightly grease with butter or oil. Pour ¼ cup batter per pancake. Cook until bubbles form (about 2 minutes), then flip and cook for another 1-2 minutes until golden.
