Ingredients
- 200 g Manitoba flour
- 300 g flour
- 13 g fresh brewer’s yeast (or 4 g dry yeast)
- 20 g sugar
- 40 g seed oil
- 280 g milk
- 10 g salt
- 1 egg yolk (for brushing)
- 20 g milk (for brushing)
Instructions
- Mix the flours in a bowl, add the crumbled yeast, warmed milk and sugar.
- Start kneading with the planetary mixer or by hand. Add the seed oil, continuing to mix and finally the salt.
- Knead everything for at least 15 minutes, until the mixture becomes soft, homogeneous and elastic.
- Knead the mixture again, form a ball, cover with cling film and let it rise in a warm place for at least 2 hours, until it doubles in size.
- Once the leavening time is over, take the dough and roll it out on a pastry board, with a little flour, into a not too thin rectangle with a base as long as the mould, approximately 30 x 45 cm.
- Roll up from the short side and insert it into the 30 cm plumcake mold lined with baking paper.
- Let rise for 1 hour, until doubled. Brush with egg yolk and milk.
- Cook at 175 degrees for 30 minutes in a static oven. If the surface darkens too much, cover with foil halfway through cooking.
