Coffee biscuits are crumbly shortcrust pastry biscuits with a coffee flavour , excellent to enjoy at any time of the day. These biscuits are very easy to prepare even with children , the shortcrust pastry can be prepared in 15 minutes and you don’t need molds to obtain biscuits in the shape of a ” coffee bean “. They are delicious dipped in milk for breakfast or in late afternoon tea , garnished with melted chocolate they become even more delicious and addictive. Coffee biscuits have a truly irresistible flavour, they are perfect to give as a gift or to serve with ice cream .
They are prepared with instant coffee powder and with a “secret ingredient” that makes the flavour of the coffee more delicate in the mouth and the flavour of the biscuit more delicious. The ingredient is “secret” because no one will notice its presence, and it is bitter cocoa. An ingredient that I really like because in desserts it contrasts the flavour of sugar, improving the sensation that is perceived with every bite
Ingredients
- 300 g of flour
- 150 g of granulated sugar
- 150 g of butter at room temperature
- 7 g of bitter cocoa powder
- 3 egg yolks
- 8 g baking powder
- 7 g of instant coffee powder
- 1 teaspoon vanilla extract
- 1 pinch of fine salt
Instructions
- Preheat the oven to 180°C in static mode.
- Once the dough is made, divide it into two parts and roll them one at a time on the pastry board with your hands until you obtain a long roll.
- Wrap each roll in baking paper and put it in the fridge for at least 30 minutes.
- Remove from the fridge and with a smooth-bladed knife cut slices about 0.8 cm thick.
- Place the slices spaced apart on a baking sheet lined with parchment paper and make a line in the center with the knife.
Bake in the lower part of the hot oven for 12-15 minutes, when the bottom part begins to color, remove the baking sheet and let the cookies cool. - Store them in a tin or in an airtight jar.
