Ingredients
For the Brownies:

- ¾ cup (75g) cocoa powder

- 1 cup (175g) chocolate chips (semisweet or dark)
For the Ice Cream Filling:
- 1 quart (about 4 cups) vanilla ice cream, slightly softened
- ½ cup (90g) mini chocolate chips (optional, for rolling)
Instructions
1. Make the Brownies:
- Preheat oven to 350°F (175°C). Line a 9×13-inch baking pan with parchment paper, leaving overhang for easy removal.
- Melt butter in a saucepan or microwave. Whisk in sugars until smooth.
- Add eggs & vanilla – Whisk in eggs one at a time, then vanilla.
- Fold in dry ingredients – Sift in flour, cocoa powder, and salt. Mix just until combined (don’t overmix).
- Add chocolate chips – Stir in most of the chocolate chips, reserving some for the top.
- Bake – Spread batter evenly in the pan. Sprinkle remaining chips on top. Bake 25-30 mins (until edges are set but center is slightly fudgy).
- Cool completely – Let cool in the pan, then lift out using parchment and cut into 16-20 even squares (for 8-10 sandwiches).
2. Assemble the Ice Cream Sandwiches:
- Pair brownies – Match similar-sized squares.
- Add ice cream – Scoop ¼-⅓ cup slightly softened ice cream onto one brownie, top with another, and press gently.
- Roll edges (optional) – Quickly roll sides in mini chocolate chips for extra crunch.
- Freeze – Place on a tray and freeze at least 2 hours (or wrap individually in parchment/foil for longer storage).
