Decadent fudgy brownies sandwiching creamy vanilla ice cream, loaded with chocolate chips—the ultimate frozen treat!

Makes: 8-10 sandwiches

Prep Time: 20 mins
Bake Time: 25-30 mins
Freeze Time: 2+ hours

Ingredients

For the Brownies:

  • 1 cup (225g) unsalted butter
  • 1¼ cups (250g) granulated sugar
  • ¾ cup (150g) brown sugar
  • 3 large eggs
  • 1 tbsp vanilla extract
  • 1 cup (120g) all-purpose flour
  • ¾ cup (75g) cocoa powder
  • ½ tsp salt
  • 1 cup (175g) chocolate chips (semisweet or dark)

For the Ice Cream Filling:

  • 1 quart (about 4 cups) vanilla ice cream, slightly softened
  • ½ cup (90g) mini chocolate chips (optional, for rolling)

Instructions

1. Make the Brownies:

  1. Preheat oven to 350°F (175°C). Line a 9×13-inch baking pan with parchment paper, leaving overhang for easy removal.
  2. Melt butter in a saucepan or microwave. Whisk in sugars until smooth.
  3. Add eggs & vanilla – Whisk in eggs one at a time, then vanilla.
  4. Fold in dry ingredients – Sift in flour, cocoa powder, and salt. Mix just until combined (don’t overmix).
  5. Add chocolate chips – Stir in most of the chocolate chips, reserving some for the top.
  6. Bake – Spread batter evenly in the pan. Sprinkle remaining chips on top. Bake 25-30 mins (until edges are set but center is slightly fudgy).
  7. Cool completely – Let cool in the pan, then lift out using parchment and cut into 16-20 even squares (for 8-10 sandwiches).

2. Assemble the Ice Cream Sandwiches:

  1. Pair brownies – Match similar-sized squares.
  2. Add ice cream – Scoop ¼-⅓ cup slightly softened ice cream onto one brownie, top with another, and press gently.
  3. Roll edges (optional) – Quickly roll sides in mini chocolate chips for extra crunch.
  4. Freeze – Place on a tray and freeze at least 2 hours (or wrap individually in parchment/foil for longer storage).

Tips for Success

✅ Use thick, fudgy brownies – Underbake slightly for a soft texture.
✅ Ice cream temp matters – Too soft = messy; too hard = won’t spread. Let it sit 10-15 mins before scooping.
✅ Customize it! Try:

  • Mint chip ice cream + brownies
  • Peanut butter ice cream + chopped Reese’s
  • Cookies & cream ice cream

Storage

  • Freezer: Up to 2 weeks (wrap tightly to prevent freezer burn).
  • Serving: Let sit 5 mins before eating for the perfect texture.

These are irresistibly rich, chewy, and creamy—perfect for summer or anytime! Let me know if you want variations.
