A delicious cake made from fluffy sponge cake soaked in orangesyrup, two layers of curd cream with agar agar: one layer with vanilla flavor, the second with orange flavor, and whipped cream with candied fruits. Light cottage cheese cake with oranges for dessert, it couldn’t be better! The size of the form is 18 centimeters.

For the biscuit:

  • 3 eggs;
  • 3 tablespoons sugar;
  • 85 g wheat flour.

For the curd cream:

  • 1 large orange;
  • 400 g cottage cheese (or mascarpone, or ricotta);
  • 50 g fat sour cream;
  • 150 g sugar;
  • 150 ml milk;
  • 2 teaspoons agar agar;
  • 1 g vanillin;
  • a pinch of salt.

For decoration:

  • 200 ml 33% cream;
  • candied fruit.

Step-by-step cooking recipe:

Using a mixer, beat the eggs and sugar for 6-7 minutes, until the mass increases 3 times in volume. Sift the flour onto the whipped mixture and mix gently.

Line a springform pan with a diameter of 18 centimeters with non-stick parchment and lay out the dough. Bake at 180 degrees for 15 minutes. Cool the biscuit on a wire rack.

Squeeze the juice out of the orange and strain. You will need approximately 170 g of juice. Leave 40 ml of juice for soaking the biscuit.

Pour the orange juice into a saucepan and add 1 teaspoon of agar agar. Leave for 10 minutes.

Pour in 50 g of sugar, heat to a boil, cook over medium heat for 5 minutes.

Mix cottage cheese, 50 g of sugar, sour cream, add a pinch of salt. The cottage cheese needs to be smooth like paste, without lumps; with mascarpone or ricotta it also turns out very tasty.

Pour milk into a saucepan, add 1 teaspoon of agar agar and vanillin. Leave for 10 minutes. Pour in 50 g of sugar, heat to a boil, cook for 5 minutes over low heat. Divide the curd mass in half. Beat one half with hot milk. You need to whisk quickly, as the agar stabilizes at a temperature of about 36 degrees Celsius.

To decorate, pour a little orange syrup with agar into the silicone mold.

Pour the curd cream over the orange syrup and put the mold in the refrigerator.

Beat the remaining cottage cheese with hot orange syrup and agar. To soak the biscuit, pour a little sugar into the orange juice, heat to a boil, and boil for 3 minutes. If the cake is for adults, then strong alcohol can be added to the syrup. Assembling the cake: place a sponge cake on the bottom of the mold, soak it in orange syrup. Then spread the curd mass with agar, let it harden a little and pour the curd cream with orange syrup on top.

Place the cake in the refrigerator for several hours.

Whip the cream and transfer it to a pastry bag. Decorate the curd cake with oranges: put two-layer jelly in the center, decorate around with whipped cream and candied fruits. Bon appetit!
