Delicious peach pound cake studded with chunks of juicy, fresh peaches is an easy summer treat.
- 2 sticks butter
- 2 c. sugar
- 1/4 c. plain Greek yogurt
- 3 large eggs
- 1 1/2 tsp. pure vanilla extract
- 3 c. flour
- 1 tsp. baking powder
- 1 tsp. kosher salt
- 2 c. diced fresh peaches
- Preheat oven to 325°. In a large mixing bowl, cream butter and sugar until it’s light and fluffy, 4 to 5 minutes. Add Greek yogurt, eggs and vanilla, beating on low until combined. Stir in flour, baking powder and salt.
- Step 2Fold in diced peaches. Pour into a greased loaf pan and bake until a toothpick inserted into the center comes out with just a few crumbs, 68 to 70 minutes.
