These shortbread cookies are melt-in-your-mouth, crumbly and tasty cookies. They are easy to prepare and you will love them.
Ingredients
- 1 medium egg
- 80g powdered sugar
- 80g mayonnaise
- 90g butter
- 240g flour
- 1 tsp baking powder (4g)
- A pinch each of salt and vanilla
Instructions
- Preheat the oven to 350F/180C before starting the process. Add softened butter, powdered sugar, a pinch of salt and vanilla into a mixing bowl. All ingredients that you are using should be at room temperature, mix the ingredients until fully combined and smooth.
- Add one egg and mayonnaise and mix until the added ingredients are incorporated. In another bowl, sift and mix one cup of flour and a teaspoon of baking powder then add the flour mixture in small batches into the butter mixture and whisk it in. Continue adding the next batch as you mix it in with a spatula, if you add all the flour at once you will find it difficult to mix it with the batter or the batter will not be mixed well.
- After mixing all the flour and you have a smooth dough with no flour or lumps, add the batter into a piping bag. Pipe the cookie dough onto a parchment-lined baking sheet, you can pipe them into any shape or pattern of your choice. Once done, bake the cookies in the oven for 18 minutes, If you don’t preheat your oven before you start baking, the cookies will lose shape.
- Bake in a well-heated oven to 180C for 15 minutes.
- Once baked and out of the oven. lightly sprinkle them with powdered sugar. Enjoy the cookies plain or pair them with jam.
