These Sable Cookies are rich and tender, with a delicate crumb. They’re simple, lightly sweet, and the perfect companion for a warm cup of coffee, hot chocolate, or tea.
Ingredients
- Unsalted butter 50g
- Powdered sugar 35g
- Salt 0.3g
- Egg yolk 10g
- Flour 80g
- Almond powder 20g
Instructions
- Put the butter, salt, and powdered sugar in a bowl and use a rubber spatula to cream them.
- Switch to a whisk and mix until it becomes whitish. If it’s mixed evenly, it’s OK.
- Add the egg yolk to the mixture and mix with a whisk until it’s evenly mixed.
- Add the sifted soft flour/almond powder into step 3,mix at first as if cutting, and occasionally brush off the flour that clings to the edges of the bowl and mix until it no longer looks like flour.
- Once the dough has formed into a ball,spread the dough evenly across the bowl.
- If you want to change the taste, divide it into two equal parts and add nuts or tea leaves.Gather the dough into a stick shape , being careful not to leave any holes inside
- Wrap it in a baking sheet cut into 10cm pieces and let it rest in the refrigerator for 1 hour.
- Moisten the brush with water and lightly apply it to the sable and coat with granulated sugar.
- Cut into 1cm wide pieces, place on a baking sheet and bake at 170 degrees for about 20 minutes.
