This banana nut bread is moist, tasty, and packed full of nutty goodness. It’s easy to make and an excellent and delicious way to use up overripe bananas.
Ingredients
- All-purpose flour – 1 & 3/4 cups
- Baking powder – 1 teaspoon
- Baking soda – 1/2 teaspoon
- Salt – 1/4 teaspoon
- Cinnamon powder – 1/2 teaspoon
- Nutmeg – 1/2 teaspoon
- Ripe bananas – 4 large
- Sugar – 1/2 cup + 2 tablespoons
- Vegetable oil – 1/4 cup
- Melted butter – 1/4 cup
- Eggs – 2
- Vanilla – 1 teaspoon
- Peanut – 1/4 cup
- Almonds – 1/4 cup
- Cashew – 1/4 cup
Instructions
- Grease a loaf pan with butter and line the bottom with baking paper.
- Measure out the flour into a mixing bowl. Add the baking powder, baking soda and salt.
- Add the cinnamon powder and grate in about 1/2 teaspoon of nutmeg.
- Whisk to combine and set it aside.
- Add the peanut, almonds and cashew into mortar.
- Pound gently. You only need to crush, it doesn’t have to be smooth. Set aside.
- Mash 4 ripe or over ripe bananas with a fork. It doesn’t have to be smooth.
- Add the sugar, vegetable oil (Use oil of choice) and melted butter.
- Whisk in two eggs and mix to combine.
- Add the banana mixture into the flour and mix to combine.
- Fold in the nuts and mix to combine.
- Transfer the batter into the greased loaf pan.
- Top with extra nuts.Bake in the preheated 350 degrees oven for 45 to 50 minutes or until a toothpick inserted comes out clean.
- Remove the bread from the oven and allow to cool in the pan for 10 minutes.
- Remove from the pan and cool completely.
