These are not only the cutest but also THE BEST gluten free doughnuts you’ll ever make. They’re incredibly soft and fluffy and just ridiculously delicious, and even non-gluten-free folks will love them. And while these flower doughnuts look super impressive, the flower shape is actually surprisingly easy to achieve, no special equipment needed.
Ingredients
- 1 egg
- 7 tablespoons of milk, warm (100 ml)
- 1 teaspoon of yeast (3 grams)
- 1 3/8 cups of high-gluten flour (175 grams)
- 5/8 cups of low-gluten flour (75 grams)
- 2 1/2 tablespoons of sugar (30 grams)
- 3/4 teaspoon of salt (3 grams)
- 1 1/2 tablespoons of butter (20 grams)

Instructions
- In a bowl or container, add the warm milk and dry yeast. Stir until well combined.
- In a large mixing bowl, add high-gluten flour, low-gluten flour, sugar, and salt. Mix until well combined.
- Beat one egg and pour it into the mixture, followed by the butter and milk-dry yeast mixture. Mix until well combined and form into crumbs.
- Wear your gloves and knead the dough. After that, cover the bowl with a cling wrap or plate and let it sit for 10 minutes. Transfer to a clean table and repeatedly beat the dough. Keep kneading the dough for about 20 minutes until it’s no longer sticky. You can also use your stand mixer. Round the dough, place it back in the bowl, and cover it with plastic wrap with a few holes. Let the dough double in size.
- Remove the air from the dough, then divide it into 8 portions and place on baking paper to rest for 10 minutes.
- Get one of the pieces and roll out the dough into a slightly round shape. Use a small bottle to make a small hole in the middle, then divide the sides of the dough into 6 equal parts. Press the petals with your fingers to create the shape of the flower. Repeat with the other pieces. Cover them with cling wrap and wait until the dough doubles in size.
- Heat a generous amount into a pot. Once the temperature is 338F, put the dough and baking paper into the oil. Remove baking paper and fry it until golden brown for about 50 seconds. Flip and fry the other side. Repeat with the remaining dough.
- Coat the donuts with granulated sugar. Serve and enjoy!
