Red, White & Blue Berry Coconut Slushies

A patriotic, frosty blend of coconut and fresh berries—perfect for summer celebrations!

Ingredients (Serves 2)

Red Layer (Strawberry):

  • 1 cup frozen strawberries
  • ½ cup coconut water (or regular water)
  • 1 tbsp honey or agave
  • 1 tsp lime juice

White Layer (Coconut Cream):

  • ½ cup coconut milk (full-fat, chilled)
  • ½ cup crushed ice
  • 1 tbsp honey
  • ½ tsp vanilla extract

Blue Layer (Blueberry):

  • 1 cup frozen blueberries
  • ½ cup coconut water
  • 1 tbsp honey
  • 1 tsp lime juice

Toppings (Optional):

  • Fresh raspberries, blueberries & shredded coconut
  • Paper umbrellas or mint sprigs

Instructions

  1. Blend Each Layer Separately:
    • Red: Blend strawberries, coconut water, honey, and lime until smooth. Pour into glasses, filling ⅓ of the way. Freeze for 10 mins to set.
    • White: Blend coconut milk, ice, honey, and vanilla until creamy. Gently pour over the red layer (use a spoon to guide it). Freeze 10 mins.
    • Blue: Blend blueberries, coconut water, and honey. Top the white layer.
  2. Serve Immediately:
    • Garnish with fresh berries and coconut. Add a straw and enjoy!

Tips

✔ Use frozen fruit for a thick, slushy texture.
✔ For a boozy twist, add 1 oz rum to the blue layer.
✔ Make ahead: Freeze layers in separate containers, then blend briefly before serving.

Cool off with this vibrant, dairy-free treat—great for the 4th of July or poolside sipping!

Variation: Swap blueberries for blackberries or mango for a tropical twist!
