Caramelized pineapple upside-down cake

Today I propose to you a delicious pineapple cake that is simple to make and of great effect which, thanks to its caramelized surface, will be crunchy and tasty. Adding pineapple juice to the dough will give the cake a delicious aroma and flavor!

Ingredients

  • Flour 250 g
  • Butter 150 g
  • Sugar 100 g
  • Eggs 3
  • Half a sachet of vanilla yeast
  • 100ml milk or pineapple syrup
  • Pineapple in syrup 1 jar
  • 30 g butter
  • 80 g brown sugar for caramelization.

Instructions

  1. First of all, cut out a disc of baking paper and make it adhere perfectly to the bottom of a 26cm diameter baking tray.
  2. Melt 30g. of butter in a non-stick saucepan with 80 gr. of brown sugar until it is well caramelized, then distribute it evenly on the paper that you have placed on the bottom of the pan. Now place the pineapple slices on top of the caramel.
  3. At this point, put the white sugar together with the soft butter in the mixer and start mixing with the whisk. When everything starts to mix, add the eggs and continue whisking for a few seconds.
  4. Insert the sifted flour with the yeast and change the whisk with the leaf hook, knead the mixture, adding the milk (or syrup) little at a time. Finally, when you have obtained a consistent spoonful cream, add the pineapple you have leftover to the mixture, cutting it into small pieces.
  5. Tip the mixture into the cake pan over the pineapple slices and cook in a preheated oven for approximately 45 minutes at 180 degrees.
