Ingredients

For the Cookie Dough:

  • 1/2 cup (1 stick) unsalted butter, softened
  • 4 oz cream cheese, softened
  • 3/4 cup granulated sugar
  • 1/2 cup brown sugar, packed
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 cup semi-sweet chocolate chips

For the Cheesecake Filling:

  • 4 oz cream cheese, softened
  • 1/4 cup granulated sugar
  • 1/2 teaspoon vanilla extract

Instructions

Step 1: Make the Cheesecake Filling

  1. In a small bowl, beat the cream cheese, sugar, and vanilla extract until smooth and creamy.
  2. Scoop teaspoon-sized portions of the filling onto a parchment-lined plate or tray.
  3. Freeze the filling portions for at least 1-2 hours, or until firm.

Step 2: Prepare the Cookie Dough

  1. In a large mixing bowl, cream together the softened butter, cream cheese, granulated sugar, and brown sugar until light and fluffy.
  2. Add the egg and vanilla extract, and mix until well combined.
  3. In a separate bowl, whisk together the flour, baking soda, and salt.
  4. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  5. Fold in the chocolate chips.

Step 3: Assemble the Cookies

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. Scoop about 2 tablespoons of cookie dough and flatten it slightly in your hand.
  3. Place a frozen cheesecake filling portion in the center of the dough.
  4. Wrap the dough around the filling, sealing it completely, and roll into a ball.
  5. Place the dough balls on the prepared baking sheet, spacing them about 2 inches apart.

Step 4: Bake the Cookies

  1. Bake for 12-14 minutes, or until the edges are lightly golden but the centers are still soft.
  2. Remove from the oven and let the cookies cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.

Step 5: Serve and Enjoy!

  1. Serve the cookies warm or at room temperature.
  2. Store any leftovers in an airtight container at room temperature for up to 3 days, or in the fridge for up to a week.

Tips:

  • For extra flavor, add a pinch of cinnamon or a handful of chopped nuts to the cookie dough.
  • If the cheesecake filling is too soft to handle, freeze it for a bit longer before assembling the cookies.
  • These cookies are best enjoyed fresh but can be reheated in the microwave for a few seconds to restore their softness.

These Soft & Chewy Chocolate Chip Cheesecake Cookies are a delightful twist on two classic desserts!
