Ingredients

  • 200 g Manitoba flour
  • 300 g flour
  • 13 g fresh brewer’s yeast (or 4 g dry yeast)
  • 20 g sugar
  • 40 g seed oil
  • 280 g milk
  • 10 g salt
  • 1 egg yolk (for brushing)
  • 20 g milk (for brushing)

Instructions

  1. Mix the flours in a bowl, add the crumbled yeast, warmed milk and sugar.
  2. Start kneading with the planetary mixer or by hand. Add the seed oil, continuing to mix and finally the salt.
  3. Knead everything for at least 15 minutes, until the mixture becomes soft, homogeneous and elastic.
  4. Knead the mixture again, form a ball, cover with cling film and let it rise in a warm place for at least 2 hours, until it doubles in size.
  5. Once the leavening time is over, take the dough and roll it out on a pastry board, with a little flour, into a not too thin rectangle with a base as long as the mould, approximately 30 x 45 cm.
  6. Roll up from the short side and insert it into the 30 cm plumcake mold lined with baking paper.
  7. Let rise for 1 hour, until doubled. Brush with egg yolk and milk.
  8. Cook at 175 degrees for 30 minutes in a static oven. If the surface darkens too much, cover with foil halfway through cooking.
