Here’s a simple recipe for homemade Chocolate  Ice Cream Bars:


Ingredients

For the Ice Cream:

  • 2 cups heavy cream
  • 1 cup whole milk
  • 3/4 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 1/2 cup mini chocolate chips

For the Chocolate Coating:

  • 1 1/2 cups semi-sweet or dark chocolate chips
  • 2 tablespoons coconut oil (or neutral oil)

Optional Add-ins:

  • Crushed cookies, nuts, or sprinkles for topping

Instructions

Step 1: Make the Ice Cream Base

  1. In a large bowl, whisk together the heavy cream, milk, sugar, and vanilla until the sugar is fully dissolved.
  2. Pour the mixture into an ice cream maker and churn according to the manufacturer’s instructions (usually about 20-25 minutes).
  3. During the last 2-3 minutes of churning, add the mini chocolate chips.

Step 2: Freeze the Ice Cream

  1. Line a baking dish (8×8 inches or similar) with parchment paper.
  2. Spread the churned ice cream evenly into the dish.
  3. Cover with plastic wrap or aluminum foil and freeze for at least 4-6 hours, or until solid.

Step 3: Cut into Bars

  1. Once the ice cream is fully frozen, lift it out of the dish using the parchment paper.
  2. Cut into rectangular bars (about 8-10 bars, depending on size).
  3. Place the bars on a parchment-lined tray and return to the freezer while you prepare the chocolate coating.

Step 4: Prepare the Chocolate Coating

  1. In a microwave-safe bowl, combine the chocolate chips and coconut oil.
  2. Microwave in 30-second intervals, stirring in between, until the chocolate is fully melted and smooth.
  3. Let the chocolate cool slightly (but not harden).

Step 5: Coat the Bars

  1. Remove the ice cream bars from the freezer.
  2. Dip each bar into the melted chocolate, coating evenly. Use a spoon to help cover any gaps.
  3. If desired, sprinkle with crushed cookies, nuts, or sprinkles while the chocolate is still wet.
  4. Place the coated bars back on the parchment-lined tray.

Step 6: Freeze Again

  1. Freeze the coated bars for at least 1-2 hours, or until the chocolate is fully set.

Step 7: Serve and Enjoy!

  1. Let the bars sit at room temperature for 1-2 minutes before serving for easier biting.
