The taste of honey permeates every bite making it an absolute delight.
Ingredients
- 300g Flour
- 15g Baking Powder (2.5 tsps)
- 1/2 tsp Salt (Omit if you are using salted butter)
- 250g Honey
- 100g Sugar
- 225g Unsalted Butter
- 3 Eggs
Instructions
- Butter and line an 8″ pan with parchment paper.
- Preheat an oven to 160C.
- Sieve the flour, baking powder, and salt together. Set aside.
- To a heavy bottomed vessel, add the honey, butter, and sugar.
- Over low flame, heat the mix till the butter and sugar melt.
- Take off the heat and let it cool. This is to ensure that the eggs do not cook in the hot mix.
- In the meantime, beat 3 eggs.
- When the honey-sugar-butter mix cools, add the beatens eggs and mix well.
- Add the flour and mix well to ensure there are no clumps.
- Transfer the batter to the lined cake pan.
- Bake for 60 minutes at 160 C or till the skewer comes out clean.
- Remove from the oven.
- For the Glaze: Warm 2 tbsp honey.Use a brush to quickly apply the glaze to the still-warm cake.
