Imagine sharing a special moment with your loved one, enjoying these delicious treats that melt in your mouth. I also prepared them with a small and sweet surprise inside, a raspberry stuffed with raspberry jam.
Easy to prepare, Red Velvet Cupcakes are a cute and original way to show your love and affection through food.
Ingredients
- 1 egg
- 80 g flour
- 20 g corn starch
- ½ teaspoon baking soda
- pinch of salt
- 80 g sugar
- 80 g butter
- ½ teaspoon vanilla extract
- red gel dye
For the buttermilk
- 30 g milk
- 30 g low-fat yogurt
- juice of half a lemon
For the frosting
- 200 ml fresh whipping cream
- 3 tablespoons of icing sugar
- 250 g mascarpone
For decoration
- 12 raspberries
- 2 tablespoons raspberry jam
Instructions
- For the buttermilk:In a bowl mix milk, yogurt and lemon juice. Cover and let rest at room temperature.
- For the dough:In a bowl, blend the soft butter with the sugar until you obtain a smooth mixture.
- Take the buttermilk and add the egg, vanilla extract and gel coloring (half a teaspoon should be enough). Mix well with a whisk. Bear in mind that it will tend to darken during cooking.
- Pour the buttermilk into the butter and sugar mixture and blend well.
- Add sifted flour, bicarbonate of soda and starch, a pinch of salt and continue mixing with the whisk.
- For the cooking: Pour the mixture into 6 cups inside a muffin mold and cook in a static oven at 160 degrees for 20/25 minutes.
- For the frosting:Blend the sugar, cream and mascarpone in a bowl until you obtain a dense and homogeneous mixture. Pour the frosting into a piping bag with a ribbed nozzle.
- For decoration :Once your muffins are out of the oven, use a nozzle to make a small hole in the center of each muffin, remove a little of the dough and set aside.
- Place the jam in a small piping bag, make a small hole and fill 6 raspberries which you will place in the hole of the muffin.
- Cover with the frosting. Decorate with another stuffed raspberry and with the dough crumbs kept aside.
