This Orange Raspberry Loaf is a delicious sight to see on your table on any given day. It has a very nice soft and moist texture, a natural Orange flavor inside and out, and bits and pieces of fresh Raspberry. This is so easy to make, a quick bread which means quick solution for a busy morning.
Ingredients
- 3/4 cups fresh Raspberry
- 1 1/2 cups All-Purpose Flour
- 2 teaspoon Baking Powder
- 1/2 teaspoon Baking Soda
- 1/4 teaspoon Salt
- 1/4 cup + 2 tablespoon Flavorless Oil
- 1/2 cup granulated Sugar
- 1 large Egg – room temperature
- 1/4 cup + 1 tablespoon Plain Greek Yogurt
- 1/4 cup Milk
- 1/2 teaspoon Vanilla Extract
- zest of one Orange (about 1 tbsp)
- 2 tablespoon freshly squeezed Orange Juice
Orange Glaze
- 1/2 cup Confectioners Sugar
- 4 teaspoon Orange Juice
- Zest of 1 Orange
Instructions
- Preheat oven to 350°F. Spray a 7-inch loaf pan with non-stick cooking spray and line the bottom with parchment paper.
- In a large bowl, mix together the flour, baking powder and salt. Fold in the Raspberry gently mix to cover Raspberry with flour. Set aside.
- In a medium bowl, whisk together the vegetable oil, sugar, eggs, milk, yogurt, orange juice, vanilla and orange zest.
- Slowly add to the wet ingredients to the dry ingredients. Mix until JUST combined. Pour the batter in a prepared 7-inch loaf pan.
- Bake for 45- 50 minutes or until toothpick inserted in the center comes out clean. If the top begins to brown early, cover the pan with aluminum foil to prevent burning.
- Make the Orange Glaze: Mix confectioners sugar, orange juice and orange zet until smooth. You can adjust the consistency by reducing or increasing the orange juice
