Moist Orange cake

veryone has their favourite recipe for orange cake. The one we like best is the one we bring you today, as the proportions of its ingredients make it a soft and delicious treat .

We like to serve this cake for breakfast and snacks . Also, a little trick: it freezes perfectly, so if there is any left over, we can have small portions separated with greaseproof paper in the freezer and take them out to accompany our coffee or afternoon tea.

Ingredients

  • 165 g of sugar
  • 60 g butter at room temperature
  • 1 tablespoon orange zest (half of 1 orange)
  • 150 g of wheat flour
  • 8 g baking powder
  • 1 pinch of salt
  • 150 ml orange juice (1 squeezed orange)
  • 2 eggs

Instructions

  1. Beat 165 g of sugar with 60 g of butter at room temperature and 1 tablespoon of orange zest until you obtain a whitish mixture. Preheat the oven to 175 °C.
  2. Sift 150 g of wheat flour with 8 g of baking powder and a pinch of salt into a bowl.
  3. Add 1 beaten medium egg, part of the flour and 75 ml of orange juice to the sugar and butter mixture, beating at the same time with the whisk. While continuing to beat, add the other beaten egg, the rest of the flour and the remaining 75 ml of juice, and mix until obtaining a homogeneous mixture.
  4. Line a mould with baking paper and pour the mixture into it. In our case, we have used a mould measuring 20 cm long by 11 cm wide, although any other mould of similar dimensions would work.
  5. Bake the cake at 175 °C for 25-30 minutes or until a toothpick inserted in the centre comes out clean. Remove from the oven and let cool for 5 minutes without removing from the mould on a rack.
  6. Unmold the cake and let it cool completely on a rack.
  7. Once cold, we can enjoy this delicious homemade cake
