Have you ever tasted the coppers of Naples ? They are soft cocoa biscuits glazed with chocolate, the name can be deceiving but in reality they are Sicilian sweets
Ingredients
- 250 g flour
- 50 g bitter cocoa powder
- 100 g caster sugar
- 100 g butter
- 140 ml whole milk
- 1 tablespoon honey
- 1 teaspoon ground cinnamon
- 1 orange ( grated peel )
- 3 ground cloves
- 5 g ammonia for desserts
For coverage
- 1 orange marmalade ( to taste )
- 100 g dark chocolate
- 25 g butter
- 1 chopped pistachios
Instructions
- In a mixer but it’s also fine by hand add the 00 flour, cocoa, sugar, cinnamon, orange peel and cloves mix with the leaf
- Add the egg, milk, honey and other ingredients
- Work the dough with the leaf until it is soft and not very sticky
- Form 30 g balls and place them spaced apart on baking paper
- Cook at 180 for about 20 minutes
- Once cooked, melt the chocolate with the butter
- Dip each biscuit on one side and cover with chopped pistachios!
