Chocolate biscuits

Have you ever tasted the coppers of Naples ? They are soft cocoa biscuits glazed with chocolate, the name can be deceiving but in reality they are Sicilian sweets

Ingredients

  • 250 g flour
  • 50 g bitter cocoa powder
  • 100 g caster sugar
  • 100 g butter
  • 140 ml whole milk
  • 1 tablespoon honey
  • 1 teaspoon ground cinnamon
  • 1 orange ( grated peel )
  • 3 ground cloves
  • 5 g ammonia for desserts

For coverage

  • 1 orange marmalade ( to taste )
  • 100 g dark chocolate
  • 25 g butter
  • 1 chopped pistachios

Instructions

  1. In a mixer but it’s also fine by hand add the 00 flour, cocoa, sugar, cinnamon, orange peel and cloves mix with the leaf
  2. Add the egg, milk, honey and other ingredients
  3. Work the dough with the leaf until it is soft and not very sticky
  4. Form 30 g balls and place them spaced apart on baking paper
  5. Cook at 180 for about 20 minutes
  6. Once cooked, melt the chocolate with the butter
  7. Dip each biscuit on one side and cover with chopped pistachios!
