Here’s a simple and delicious recipe for homemade brioche buns (6 pieces). These buns are soft, buttery, and perfect for burgers, sandwiches, or just eating on their own!


Ingredients

  • 2 1/4 cups (280g) all-purpose flour
  • 1/4 cup (50g) granulated sugar
  • 1 tsp instant yeast (or active dry yeast)
  • 1/2 tsp salt
  • 3 large eggs (2 for the dough, 1 for egg wash)
  • 1/4 cup (60ml) warm milk (about 110°F/43°C)
  • 1/2 cup (115g) unsalted butter, softened (cut into cubes)
  • 1 tbsp water (for egg wash)
  • Optional: Sesame seeds or poppy seeds for topping

Instructions

1. Prepare the Dough

  1. In a large mixing bowl or stand mixer, combine the flour, sugar, yeast, and salt.
  2. Add 2 eggs and warm milk. Mix on low speed until the dough comes together.
  3. Gradually add the softened butter, a few cubes at a time, mixing until fully incorporated. The dough will be sticky and soft.
  4. Knead the dough for about 8-10 minutes (by hand or with a dough hook) until it becomes smooth and elastic.
  5. Place the dough in a lightly greased bowl, cover with plastic wrap or a clean kitchen towel, and let it rise in a warm place for 1-2 hours, or until doubled in size.

2. Shape the Buns

  1. Once the dough has risen, punch it down to release any air bubbles.
  2. Divide the dough into 6 equal portions (about 100g each) and shape them into smooth balls.
  3. Place the balls on a baking sheet lined with parchment paper, leaving enough space between them to expand.
  4. Cover the buns lightly with plastic wrap or a kitchen towel and let them rise for another 45 minutes to 1 hour, or until puffy.

3. Bake the Buns

  1. Preheat your oven to 375°F (190°C).
  2. In a small bowl, whisk together the remaining egg and 1 tablespoon of water to make an egg wash.
  3. Gently brush the tops of the buns with the egg wash. Sprinkle with sesame seeds or poppy seeds if desired.
  4. Bake for 15-18 minutes, or until the buns are golden brown on top.
  5. Remove from the oven and let them cool on a wire rack before serving.

Tips

  • If the dough is too sticky, lightly flour your hands or work surface while shaping the buns.
  • For a richer flavor, you can substitute the milk with heavy cream.
  • Store leftover buns in an airtight container at room temperature for up to 2 days, or freeze for longer storage.
