Don’t buy peach cakes anymore, I’ll teach you the authentic recipe, it’s crispy, healthier and more delicious than the ones you buy!
Ingredients
- lard 60g
- all-purpose flour 85g
- low-gluten flour 15g
- egg yolk 1
- soft sugar 45g
- salt 1g
- baking soda 1g
- baking powder 1.5g
- appropriate amount of black sesame seeds
Instructions
- Prepare lard. Let the lard soften at room temperature in advance and do not melt. Add sugar and salt
- Stir first, then use an electric whisk to beat the lard until it becomes fluffy and white in color
- Add the egg yolk liquid in batches and continue to beat evenly. Mix thoroughly after each addition and then add the next one
- Add baking powder and baking soda to low-gluten flour, mix slightly and stir evenly, then sift in
- Use a spatula to stir until the dry powder is no longer visible, then use a scraper to cut and mix the dough into a ball, and finally knead it evenly with your hands
- Roll it into long strips, cut into 8 equal pieces, and then roll the pieces into round balls
- Place it on the baking sheet, use your fingers to poke a hole in each small pot without poking the bottom, and put an appropriate amount of black sesame seeds inside
- Preheat the oven in advance and bake at 180 degrees for about 16 minutes. The peach cake will spread out by itself, then slowly color, and it’s ready to be baked.
