  • sugar 90g
  • honey 25g
  • vanilla extract 4g
  • unsalted butter 30g
  • vegetable oil 15g
  • milk 30g
  • weak flour 110g
  • baking powder 1g
  • salt 1.5g
  • Melted unsalted butter 8g
  • honey 10g


  1. Add eggs, sugar, honey, and vanilla extract to a double boiler and mix well.
  2. When it reaches about 40°C, take it out of the double boiler.
  3. Whip until white.
  4. Add cake flour, baking powder, and salt and mix.
  5. Take a small amount of dough and add it to the butter, oil, and milk mixture and mix well.
  6. Add the mixed dough into the main dough and mix well.
  7. Put about 80% of the batter into the muffin pan.
  8. Bake at 160°C for 20 minutes (temperature and time may vary depending on oven)
  9. Take it out of the oven and immediately transfer it to a cooling rack.
  10. While the muffins are still warm, spread the melted butter-honey mixture on the tops.
