Delicious Tea Cookies

These tea biscuits are moderately sweet with vanilla aroma and they turn out crumbly and tender. They are one of the simplest cookie recipes and require just a handful of ingredients.

Ingredients

  • 1/2 cup (130g/4.5 Oz) butter
  • 1 3/4 cups (210g/7.4Oz) flour
  • 5/8 cup (70g/2.5Oz) icing sugar
  • 1 medium egg
  • A pinch each of salt
  • 2 teaspoons of vanilla

Instructions

  1. Into a mixing bowl add 130 grams of room temperature butter, 70 grams of powdered sugar, a pinch of salt, and vanilla.
  2. Using an electric mixer, beat the ingredients together on medium to high speed until fluffy and well-mixed through.
  3. This should take about 4 to minutes. Add one egg and beat the egg in the butter mixture well until well incorporated then add half of 210 grams of sifted flour and mix it in just until it’s almost combined.
  4. Add the reaming flour and this time you will switch to a spatula and mix it until you have a soft cake-like batter. Do not overmix your cookie batter, stop mixing once you can see all the flour is absorbed in the batter. Fit a French star nozzle into a piping bag then transfer the batter into the piping bag.
  5. Line a baking tray with parchment paper then pipe the cookies onto the baking sheet squeezing out a small piece of dough under the paper leaving spaces for the cookies to spread when baking. Bake the cookies in a preheated 200 degrees Celsius or 390 Fahrenheit oven for 10 minutes.
  6. Once baked, remove the cookies from the pan and let them cool down on a wire rack then plate them afterward. Serve these cookies dusted with powdered sugar and a cup of milk. enjoy…
